Soalheiro Old Alvarinho

The Aguardente Bagaceira Velha Alvarinho Quinta de Soalheiro was introduced in 1999 with the release of the first series of 1428 numbered bottles. Since the first harvest, the production of this aguardente has been subject to the distillation of the best Alvarinho pomace, aging over the years in oak casks, from which it extracts the color and structure that complete the intense aroma of the grape variety. The aromatic skins of the Alvarinho grapes, separated from the must by pressing at harvest, ferment for about 1 month in an oxygen-free environment (anaerobiosis). This fermentation transforms the residual sugar into alcohol, extracting the best aromas from the skins. The slow distillation in a traditional alembic helps concentrate these aromas, resulting in a very aromatic aguardente characteristic of the Alvarinho variety. The alternation of aging in new and used oak casks over the years imparts a very particular aroma and flavor that give this aguardente a unique personality.
