Vinification of Terras D'el Rei Red Wine: The grapes from the manual harvest of our members are unloaded and immediately destemmed and crushed. Fermentation begins at a controlled temperature (25ºC-28ºC). During this period, maceration is carried out by the timed remontage process, which lasts about 6 days with the aim of promoting gentle extractions.
