Vinification of Tiago Cabaço Blog Red Varietal: In 2019, the oldest vines and best parcels experienced a long and gradual ripening, resulting in grapes with an exceptional balance between acidity and tannins. The Syrah and Alicante Bouschet varieties were the most benefited by the favorable natural conditions, delivering grapes at a perfect ripeness point. With such high-quality raw material, they decided to intervene as little as possible, allowing the grapes to speak for themselves. They limited themselves to a light foot treading in the lagares, following the traditional methods of the region, followed by aging in new and second-use French oak barrels, so that the wine could express itself in a purer way.
