Xisto Unlimited Red 2021

The grapes come from two vineyards in Cima Corgo, one in Covas do Douro and the other in Ervedosa do Douro, both over 80 years old; the first planted at 400m altitude, facing West and the second planted at 570m and facing North. The predominant grape varieties are Rufete, Touriga franca, Tinta carvalha, Malvazia preta, Alicante de Bouchet, and Donzelinho tinto among others. The two vineyards were harvested separately, with the grapes vinified in open old wooden vats of recovered Porto wine, both with 60% whole clusters. The total maceration was 29 days, after pressing the wine, which aged in 350-liter and 228-liter barrels for the Ervedosa wine. The malolactic fermentation took place in barrel, in contact with the lees, and its total aging was 18 months.
